As an Egg Fest Cook Team, you can prepare anything you like to serve – brisket, Boston butt, smoked oysters, salmon, shrimp, paella, jambalaya, tri-tip, beef and pork tenderloin, stuffed shrimp and even sides or desserts.

  • 12:30 PM – Cooking Demonstration (Intensity Academy featuring Saucy Queen Michelle Northrup)
  • 2:00 PM – Cooking Demonstration (Big Green Egg 101 featuring Dana Kress of “Big Green Egg Pit Crew” – Dizzy Pig)
  • 2 :30 PM – End of Cooking
  • 3:00 PM – Awards Ceremony

We’ll have the lighting of the Eggs at 7:00 AM on Saturday and you may prepare proteins, sauces, etc. ahead of time.

Teams should be prepared to provide a minimum of 250-300 “bite sized samples” to tasters. Bites are not servings – tasters are expecting to sample your recipes.

Teams who want to cook brisket, pork shoulders or other long cooks that can’t be accomplished between the lighting of the Eggs and 9:00 AM, may choose to start their cooks on their Eggs at home, as long as the following guidelines are followed:

  • Cooking items must be finished on a Big Green Egg at the Just Grillin Eggs by the Bay Egg Fest and BBQ Cook-Off.
  • Egg Chef’s must follow Food Safe guidelines and ensure that the protein temperature has not been between 41º F-135º F for more than four hours. The internal temperature must reach between 145º F degrees whole or 155º F if injected.

Remember, you are providing “bite sized samples” – you are not expected to provide a meal. More is fine – you are encouraged to show off your skills!

What to Bring:

If you are bringing your own Egg, set-up is Friday, September 30, 2016 from 12:00 PM until 5:00 PM. If you are using a Demo Egg, it will be set up on Friday, September 30, 2016 by 12:00 PM.

Cook Teams Provide:

All ingredients required for their dishes, tent, table, chairs, thermometers, BBQ tools, oven mitts, smoking wood, seasonings, cooking spray, paper plates, napkins, plastic utensils, toothpicks, foil, paper towels, cleaning supplies, food coolers, knives, cutting boards, etc.

Cook Teams are encouraged to bring their own Eggcessories to use.

The following Eggcessories will be available for cook teams to purchase at a discount for use during Just Grillin’s Eggs by the Bay Egg Fest and BBQ Cook-Off:
